My tonic water is yellow

That is perfectly normal! Most commercially-made tonic waters use ingredients extracts and artificial flavourings which allow them to keep the colour clear. Because our tonic water is made from infusing the ingredients in their natural form, the liquid can take on their colour. In this case, the yellow comes from the lemon peel we use.
